Fig Mustard Recipe
1 tablespoon mustard seeds, yellow
1 chili pepper (s), red
1 pound of Fig (s), fresh
½ pack Gelfix
1 pound of sugar
1 lemon (s), juice
1 tablespoon mustard powder, ground yellow
1 ½ tablespoon mustard (Dijon)
Pepper, white
Instructions
Makes about 2.5 cups.
Peel and chop the figs and put into a tall pot. Mix the gelfix with about the same amount of sugar and stir in the figs.
Finely chop the chilli and add to the figs. Finish mass with the lemon juice, mustard powder, mustard, dijon mustard and plenty of white pepper.
Boil, stirring everything, then add the remaining sugar. Bring to a boil again and let it cook for at least 3 minutes.
Pass the hot mustard into prepared jars and seal immediately. Turn jars upright on the lid and let cool.
The mustard is especially good with cheese.
